I made these over the weekend! I was inspired by a recipe I saw in Martha Stewart's Living magazine.

I bought ready to use polenta, already shaped in a log.
I cut into thick slices and scooped out the center, put on a parchment lined baking sheet at the recommended temperature and let bake up in the oven.
I sauteed all my garden veggies! Excluding the onion, all came from our garden!
Heat olive oil and a pat of butter, then add thin slices of onions and bell peppers. Add as many Calabrian Chili peppers you think you can handle...WARNING...these are VERY HOT - be sure to warn your guests in case they don't like a lot of HEAT!!
Then add what you like: I added minced garlic, 2 plum tomatoes chopped and eggplant chopped.
Take the polenta bites out of your oven - if you can grill them for a minute for grill marks, or use a grill pan OR put under broiler
IMMEDIATELY after you take them out, drop in prepped fresh mozzarella into the middle scooped. I cut up very small pieces.
Cover with your veggie mixture, top with fresh basil and YUM!!!
