Spicy Pasta with Drunken Mushrooms and Garlic!
Start with #evoo and any mushroom you like! Do not salt yet, pour 2 cups white wine!!!! Let it cook down add s&p, dried thyme, oregano, basil, Italian seasoning and as much chopped or minced garlic you want, cover turn low let mushrooms drink in the wine!!!! This does take time, oh don’t forget red pepper flakes! Check on it, stir it, you may need to add liquid, more wine or low sodium chicken broth, add 2 or 3 tablespoons of butter, cover again. Boil your salted pasta water, be sure to cook al dente , transfer to mushrooms add about half cup or more pasta water and tons of fresh chopped parsley. Serve with shaved Parmesan and drizzle with olive oil.
