Ingredients:
- 1 (12-ounce) can SPAM® Classic, sliced
- 2 cups packed baby spinach
- 1 cup packed fresh parsley leaves
- 3 tablespoons shredded Parmesan cheese
- 1/3 cup olive oil
- 1/2 teaspoon salt
- 8 eggs, beaten
- 2 tablespoons butter
Directions:
- In a large skillet over medium-high heat, cook SPAM® slices for 3–5 minutes until browned.
- In a food processor, blend spinach, parsley, and cheese until finely chopped.
- With the processor running, drizzle in olive oil and blend until smooth.
- Add salt to the beaten eggs, then stir in 1/4 cup of the spinach mixture.
- In a skillet, melt butter over medium heat. Add eggs and cook, stirring, until done to your liking.
- Serve the green eggs with the crispy SPAM® slices on the side.
