Cinnamon Apple Chia Muffins!

 

Recipe from Woman's World Magazine

1 1/4 cup apple juice

1/2 cup chia seeds

1 1/2 cup buttermilk

1/4 cup extra virgin olive oil

1 tsp vanilla extract

3 cups all purpose flour

3/4 cup granulated sugar

1/2 cup packed light brown sugar

1/1/2 tbs ground cinnamon

1 tbs baking powder

1 tsp salt

1/4 tsp baking soda

1 cup cored and peeled and finely chopped apples ( from 1 medium apple)

1/4 cup raisins

 

Preheat oven to 425, spray a 12 cup muffin tin.

Small bowl mix apple juice & chia seeds, let stand for 10 to 15 minutes, stirring occasionally.

Whisk together buttermilk, oil & vanilla.

Large bowl mix flour, sugars, cinnamon, baking powder, salt and baking soda, stir in buttermilk and chia mixture until just combined. Fold in apples and raisins - don't over mix.

Pour into muffin cups - bake for 10 minutes. Reduce to oven to 375, bake an additional 13 to 15 minutes OR until toothpick comes out clean.

Cool for 5 minutes, transfer to cooling rack then enjoy.
